My current UI in a 10 person Raid situation:

Visible/Pertinent Addons:
Aloft (Nameplate Mod)
Bartender
CT_Buffmod
Deadly Boss Mods
EavesDrop
Grid
KLHThreatMeter
MikScrollingBattleText
MobInfo2
MrPlow
Outfitter
Pitbull (Unit Frames)
PowerAuras
Prat
Rupture (Rupture.com Profiler)
SW_Stats
TinyTip
WIM
WRUGS (Whitelist approach to anti-goldspam)
You'll notice my party frames are missing their health numbers; I've been running the daily builds of Pitbull and as a result funky things sometimes happen like the party frames inheriting the settings of the player frame and such. I was watching the raid frames at that time and not paying close attention to my party frames when I took the screenshot.I really love pitbull and the options it has so I think I'll stick with it even if it's a bit buggy presently.
On Wrugs:
Holy crap this mod is freaking amazing, I use NoScript so I'm used to the whitelist approach and I must say this mod gets the job done and it does it quite well. My only gripe is it doesn't support Cellular presently so I've switched to WIM until one of the authors supports the other.
MikScrolling battle text is a great scrolling combat text mod in that it replaces the text over enemy heads also. I also love that it consolidates simultaneous events as I am primarily a shadow priest so I get several ticks of mana/hp per second and I really don't need my screen filled with numbers.
KLH is great if you can get everyone in the raid to run it, or at least your tanks/damage dealers. With it I can ride the edge of the aggro threshold and be in control of my situation all the time. Using this information has really enabled me to push my damage to the maximum possible and I think others using it has really helped our raid's DPS be more aware of what they should/shouldn't do.
